1 cup bbq sauce
1/4 cup of apricot preserves
1/4 cup of apple juice

Here’s a step-by-step guide to preparing and cooking smoked lamb ribs in an electric smoker:

Instructions:

1. Preparation:

  • Rinse the lamb ribs under cold water and pat them dry with paper towels.
  • Remove the silver skin from the back of the ribs if it’s still attached.
  • Apply your preferred dry rub or marinade generously over the lamb ribs, ensuring they’re well coated. You can use a store-bought rub or make your own with spices like paprika, garlic powder, onion powder, salt, pepper, and brown sugar.
  • Once seasoned, let the ribs sit in the refrigerator for at least 1-2 hours, or ideally overnight, to allow the flavors to penetrate the meat.

2. Preparing the Electric Smoker:

  • Preheat your electric smoker to a temperature of around 225°F (107°C). This is the ideal temperature range for smoking lamb ribs.
  • Fill the smoker’s wood chip tray with your preferred wood chips. For lamb, hickory or fruit woods like apple or cherry work well to complement the flavor.

3. Smoking the Lamb Ribs:

  • Once the smoker reaches the desired temperature, place the seasoned lamb ribs directly on the smoker racks, bone side down.
  • Close the smoker lid and allow the ribs to smoke for about 3-4 hours, depending on the thickness of the ribs and desired tenderness.
  • Check the internal temperature of the ribs using a meat thermometer. Lamb ribs are done when they reach an internal temperature of around 195-203°F (90-95°C) and the meat is tender and pulls away from the bone easily.

4. Resting and Serving:

  • Once the lamb ribs reach the desired temperature and tenderness, remove them from the smoker and let them rest for about 10-15 minutes before serving. This allows the juices to redistribute throughout the meat.
  • Serve the smoked lamb ribs hot with your favorite sides and sauces.
