Ingredients
- 2 tsp of minced garlic
- 1 Tbs of salt
- 1 Tbs of black pepper
- 1 Tbs of barbeque rub
- 1 Tsp dried oregano
- 1 Tsp dried rosemary
- 1 Tsp dried thyme
- 1 cup bbq sauce
- 1/4 cup of apricot preserves
- 1/4 cup of apple juice
Procedure
- Place lamb ribs in a dish and on both sides make crisscross patterns with a knife
- Rub both sides of the ribs with garlic, salt, pepper, barbeque rub, dried oregano, rosemary, and thyme
- Smoke them at 275 F
- Cook them for 2 hours
- After 1 hour flip the sides so that they are cooked nicely
- After 2 hours wrap the ribs in a foil
- Smoke the wrapped ribs for another 1 hour
- After 1 hour cover the ribs with bbq sauce, apple juice and apricot preserves
- Smoke them for another 15 minutes
- After 15 minutes let them rest for 5 minutes
- Slice them before serving
