Ingredients
- 2 cups of brown sugar
- 1/2 cup kosher salt
- 1 Tbs black pepper
Procedure
- Mix all the ingredients in a bowl
- Take fish fillet in a dish and rinse the meat under tap water.
- Pat it dry with a paper towel
- Make the fish fillet free from bones and cut it into four sections
- Rub and cover the fish fillet with brown sugar
- After rubbing cover it with plastic wrap
- Refrigerate it for 8 hours
- Take out from the refrigerator and rinse all the sugar under water
- Pat it dry
- Place the fish fillet on the racks for one hour at room temperature
- Take them out of the racks
- Cut them into serving sizes and smoke it for 2 hours
- Brush it with apricot jam
- Serve it with cheese crackers
